Guilty Pleasures

Daily Prompt: Grateful and Guilty

Whether it’s a trashy TV show, extra-pulpy fiction, or nutrient-free candy, write a thank-you note to your guiltiest guilty pleasure (thanks for the prompt suggestion, Sarah!)

Dear Guilty Pleasure,

I just want to say thank you to the three guys in my life, that never let me down, Ben & Jerry and Robert Mondavi. You guys were there for the sad times and the happy ones, the celebratory moments as well as the lonely ones, and all without judgement. You’re only but a few minutes away, no matter the time of day. So for you I am most grateful.

Thank you,

Me

2014-11-09 19.39.25

Pumpkin walnut Blondie brownies                                                                   makes about 24 brownies
2 1/2 cups flour (I used whole wheat flour)
2 1/2 tsp baking powder
1/2 tsp  salt
1 tsp cinnamon
1 tsp nutmeg
1 3/4 cups light brown sugar, packed
3/4 cups unsalted butter (1 1/2 sticks) soften
3  large eggs
1 tsp vanilla
1 cup pumpkin puree
1 cup chopped walnuts or pecans (optional)
Combine flour, baking powder, cinnamon, nutmeg, and salt in a small bowl. Beat sugar and butter in a large bowl until creamy. Beat eggs, vanilla, and pumpkin puree; gradually beat in flour mixture. Stir in walnuts. Spread into a greased 9 x 11 pan. Bake at 350 for 20 – 25 minutes, or until top is golden brown and toothpick comes out clean when inserted in the center. Let cool completely and cut into squares.
~ These came out great! I think next time I will add in some white chocolate chips.
Enjoy!

Big Kahuna

Keeping up with the Asian inspired burger theme, above is the grilled Mahi Mahi Asian Coast style from Big Kahuna. This burger was amazing grilled Mahi Mahi on a whole wheat bun with sesame ginger slaw, cucumbers, wasabi mayo, and hoisin bbq sauce. I liked the presentation with the fries and the miniature ketchup bottle.

Big Kahuna is a laid back restaurant where the west coast meets southern hospitality. They make all of the food fresh to order….with that being said, if you decide to dine here and are beyond famished, I would suggest getting chips and salsa or something before the main course.
